So, since I keep seeing the roll ups, I decided to give them a try. At the same time, I was looking up healthy pasta dishes and I saw spinach lasagna and I thought, why not make it a roll up too?! So, I did just that! I made both varieties tonight and they were so good! I love recipes in which you can tweak and make several variations.
Since I made both varieties you will need to double the ingredients for the one you choose, unless of course you want to make both. The filling, however, will be enough for 8 roll ups.
First up...
Filling:
Ingredients:
- 1 cup part skim ricotta cheese
- 2 1/2 cups Italian Cheese Blend
- 1 egg white
- 8 Lasagna Noodles
- 1/4 cup fresh basil cut into strips
- 4 cups of spinach (It seems like a lot, but spinach wilts a lot!)
- 4 Roma tomatoes sliced
- A jar of your favorite pasta sauce.
- Put the Noodles on to boil. Cook until done.
- Preheat the oven to 350 degrees F.
- While the noodles are cooking, mix together the first three ingredients and set aside, only using 2 cups of the Italian Cheese Blend (save the 1/2 cup for the end).
- Saute' the spinach until it wilts.
- When the noodles are done, lay them out on wax or parchment paper.
- Spread 1/4 of the cheese mixture on each noodle.
- Top the caprese roll ups with 4 slices of roma tomatoes and sprinkle the fresh basil on top.
- Top the spinach roll ups with the wilted spinach.
- Spread 1/2-3/4 cup of spaghetti sauce in the bottom of a 9x13 pan (I had some empty space, but a 9x9 would have been too small)
- Roll up the noodles and lay seam side down in the pan.
- Pour the rest of the spaghetti sauce on top and then sprinkle with the last 1/2 cup of cheese.
- Bake at 350 degrees for 30 minutes.
